The saying "the simple things in life are often the best" couldn't be truer in the case of these totally yum stewed peaches.

It's a recipe that involves a handful of ingredients and is ready in less than 15 minutes - how good is that! Flavoured with vanilla, cinnamon and a little brown sugar, they are a wonderful way to brighten up a bowl of ice cream, yoghurt, granola or even as a topper on more formal desserts like panna cotta or pavlova! 

The other thing I love about this recipe, is that the peaches are so easily stored to enjoy over a few days. All you need to do to stretch out the joy is pop the stewed peaches in an airtight container or even a mason jar and pop them in the fridge - voila, you have these little bites of sunshine at your fingertips!

Serves: 6
Preparation time: 2 minutes
Cooking time: 10 minutes

Ingredients:

  • 2 large yellow peaches, stone removed and roughly chopped
  • 1 tablespoon peach schnapps (if desired or Cointreau or a botanical gin)
  • 1 teaspoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla bean paste

Instructions:

  1. Place all ingredients in a medium saucepan along with 3 tablespoons of water. Bring to a boil over a medium heat, gently stirring so as not to squash the peaches too much.
  2. Lower the heat and simmer for 7-8 minutes or until the peaches are just cooked, lightly stirring every now and then. Allow to cool a little before serving or alternatively place in an airtight container or mason jar and place in the fridge to enjoy over a few days.
